2017 Cabernet Sauvignon-NEW RELEASE
In 2015, we made the commitment to add another wine grape variety to our Estate Vineyards in our pristine Sierra Foothills ranch. The choice was easy - the King of all Grapes, Cabernet Sauvignon.
We planted 2.5 acres to three separate clones of Cabernet in equal quantities. During the wine making and barrel aging process we kept each clone separate to evaluate the similarities or differences in color, aroma, and flavors. After barrel aging for 22 months in New French Oak, we blended the wine and bottled.
Total production from our first vintage, 2017, is only 75 cases. We are offering this limited-edition wine for sale this fall in time for the Holiday Season. My recommendation would be to cellar this wine for bottle aging at least 1-3 years, but I know my customers will be tempted to try now!
I’ve nicknamed her "Pretty," as she has been a pretty and graceful wine from the very beginning of cultivation to bottling. The Taransaud and Nadalie Colbert barrels I used only enhanced this elegance. Barrel aging also brought out our Cabernet Sauvignon’s balance between red and black currant. My feeling is that this wine will age for 20 plus years, only continuing to get better and better. She is straightforward and slow in revealing herself. Enjoy our Cabernet Sauvignon’s subtly complex flavors slowly as you watch the sunset or sit in front of your fireplace. Romance will be in the air!
