2017 Cabernet Sauvignon
In 2015, we made the commitment to add another wine grape variety to our Estate Vineyards at our pristine Sierra Foothills ranch. The choice was easy - the" King of all Grapes", Cabernet Sauvignon.
Cabernet Sauvignon is a cross between the white grape variety Sauvignon Blanc and red grape variety Cabernet Franc. This vintage shows each parent equally and I call it the "white wine drinkers red wine" for that reason.
Barrel aged in new French Oak 10 months. Black cherry, boysenberry, and black currant dominate the aromatics. Herbaceous aromas of dried oregano, thyme, and rosemary, become evident as the wine opens. I have even noticed some jalapeno. The bright acidity make this young wine a great food friendly chef's wine!
This Cab will cellar for 20 plus years, only continuing to get better and better. She is straightforward and slow in revealing herself. Enjoy our Cabernet Sauvignon’s complex flavors slowly as you watch the sunset or sit in front of your fireplace. Romance will be in the air!
